Cauli & Spinach rice

Ingredients:  


1 head of cauliflower 

Handful of baby spinach (washed) 

1 tsp minced garlic 

1 tbs of Rice bran oil 

Good pinch of salt.  


Method: 


  • Wash the cauliflower and cut it into florets
  • Grate the cauliflower, either with a hand grater, or in the food processor with the grater attachment.
  • Once it’s all ‘riced’, heat the rice bran oil in a large frypan.
  • Add the cauliflower ‘rice’, garlic and salt, and sauté over a low-medium heat.
  • Taste for seasoning and add more salt (and pepper) if required.
  • While the cauliflower ‘rice’ is cooking, finely slice the baby spinach.
  • Test the ‘rice’ every couple of minutes to see if it’s cooked.
  • Once it is almost cooked, add the spinach and mix it through gently.
  • You want the spinach to be hot and starting to wilt. 
  • Once it is cooked, remove from the heat and serve
