Ingredients:
900g Potatoes
425g Tuna (in oil)
400g Frozen mixed vegetables
Salt & Pepper (to taste)
1/2 tsp Garlic powder
1/2 tsp Onion powder
1/2 tsp Paprika
Cornflour to coat (about 3/4 cup)
Oil (for shallow frying)
Method:
- Peel, chop and boil potatoes until tender.
- Drain, mash and set aside.
- Cook frozen vegetables until just tender.
- Drain and then run under cold water until cool.
- Open the tuna and pour the oil into the mashed potatoes. Stir it in thoroughly! (Alternatively, you can omit the oil and add butter or nuttelex as you would a normal mashed potato)
- Add cooled vegetables, salt, pepper, onion powder, garlic powder and flaked tuna.
- Gently mix it all together.
- Taste it to see if it needs more salt and pepper.
- Roll into balls (I use an ice cream scoop)
- Gently roll in cornflour and set aside
- Heat the oil in a fry pan (or electric fry pan)
- Cook the patties gently until they are golden brown, turning gently.
- Drain on paper towel and serve while hot!
Makes about 20 patties.
