Banana Cake - DF, EF, NF &SF

Ingredients

115g Nuttelex

1 cup sugar

2 tsp 'No egg'

4 tbs water

1/2 cup rice milk

pinch baking powder

3 bananas - mashed

1 1/2 cups SR flour

Method

  • Preheat oven to 180 degrees
  • Line a loaf tin with baking paper and set aside
  • Cream the nuttelex and sugar together until the mix is light and creamy
  • Add the 'no egg' and water and mix thoroughly
  • Add the baking powder and rice milk and mix again
  • Add the mashed banana and.... mix again
  • Finally, add the SR flour and mix,  just until everything comes together and looks thick
  • Pour into the prepared loaf tin and bake at 180 degrees (C) until a skewer comes out clean, approximately an hour.  
  • Let cool in the tray for about 10 minutes before removing and placing on a  wire rack to finish cooling.



(It is really delish warm though!!!)
